Oregano
Originating from a mint family (Lamiaceae), Oregano is a culinary herb, used for the flavor of its leaves, which can be more flavorful when dried than fresh. It has an aromatic, warm taste to it which enhances the taste and also provides a part of necessary antioxidants when people consume it in the diet. People around the Mediterranean region have used oregano for centuries in herbal medicine to treat many respiratory ailments.

Parsley in dried form is considered herb and in fresh form it can be identified as vegetable. Fresh and dried Parsley are often used as a garnish in many dishes as sprinkled on top. Excessive consumption of parsley should be avoided by pregnant women.

Rosemary

Rosemary leaves are used to flavor various foods, such as stuffing and roast meats roast lamb, pork, chicken, and turkey. Fresh or dried leaves are used in traditional cooking. Thyme
Part of the mint family and first cousin to Oregano, thyme is properly known for its culinary, medicinal, and ornamental uses. Thyme is used both fresh and dried, depending on how it is used in a dish, it is more convenient and perfectly acceptable to substitute dried for whole thyme. In ancient Rome thyme has been used in Royal baths to cure skin ailments and decrease skin ageing.
